Leong Chee Kee Coconut Tart

Leong How Keng’s tiny bakery shop is famous for its coconut tarts, pepper biscuits and Cantonese-style biscuit (which are traditionally given away to relative before a wedding)

Leong learns his recipes from his father who established the bakery and he has spent over three decades perfecting his craft. He meticulously makes all the pastries himself, from mixing the ingredients, kneading and rolling the dough and lining each pastry tray before putting these into the oven.

His wife runs the shop counter leaving him to concentrate whole-heatedly on rolling and folding the tart dough so that it achieves its wonderful flakiness.

Leong only makes 300 coconut tarts a day. He doesn’t use any preservatives in any of his pastries. His recipes have remained virtually unchanged since his father time although he has reduced the amounts of sugar in his pastries to accommodate his customer’s taste buds.
